On January 15, 2017, The Calgary, Alberta, Canada Baillage was hosted by Chef Jenny Chan and Michael Berg for the first l’Ordre Mondial event of the year. The focus of the evening was Amarone, and the wines and food did not disappoint.

The evening began with a glass of Prosecco which was accompanied by wonderfully prepared hors d’oeuvre and antipasti at the table.

Once at the tables, Vice-Echanson Linda Robinson, introduced the guests and reminded us that there are certain rules and conventions to be followed at a l’Order Mondial Diner. She then then followed the formalities with a great description of the region and method used produce Amarone and a detailed description of the histories and provenance of each of the wines to be served:

2007, Brigaldara Amarone delle Valpolicella Riserva San Floriano
2006, Giuseppe Quintarelli Amarone Della Valpolicella Classico

This was followed by a wonderfully prepared meal, well-served in an intimate setting

Crostini with Vine Ripened Tomato, Fresh Sea Urchin
Grass Fed Beef Carpaccio, Reggiano, White Truffle Vinaigrette
Spinach Croquette with D.O.P. Proscuitto San Danielle

Course 2

Scampi Fritti Verona, Organic Yellow Corn Polenta, Baccala Montecato, Shellfish Emulsion

Course 3

18-Hour Slow-Braised Driview Farms Lamb Shank in Amarone, Carnaroli Risotto, Pregiato Truffle from Alba, Porcini, Monte Veronese D.O.P.

Vero Bistro Tiramisu

Course 5

Masi Amarone Grappa Mezzanella and Valrhona Guanaja Dark Chocolate

After the meal, Vice-Echanson Linda Robinson gave well deserved accolades to Chef Jenny Chan, General Manager Michael Berg, and the entire service brigade for providing the diners with a fantastic gastronomic experience.

Overall, it was a fantastic evening filled with great comraderie of the table, excellent food and wine, and well-executed service.
