Jeunes Chefs de la Chaîne des Rôtisseurs 

Calgary Bailliage 2025

On June 2nd, 2025, three young chefs from Calgary competed in the Jeunes Chefs de Rôtisseurs Competition for Calgary! This talented group of individuals ensured a first-class event, making the tasting judge’s decision who would take home the trophy a tricky decision.

The Calgary Bailliage sincerely thanks all competitors and judges, with a special acknowledgement to Clint Morissette, Vice-Conseiller Culinaire, in making today a success.

The Jeunes Chefs for this year were:

Faustin Alejandro – Fairmont Palliser
Ngawang Tsering – Petroleum Club
Will Chung – Petroleum Club

Competitors were required to produce an appetizer, main course, and a dessert for 4 people in 3.5 hours from the following black box items:

Rainbow Trout
P.E.I. Mussels
Cornish Hen
Chicken Liver
Wild Rice
Red Lentils
Fennel
Crimini Mushroom

And they’re off!

Our competitors present the judges with their Appetizers:

Mussel – Trout Mousseline, fish-stock cerpic, fish-stock herge, tomato salsa,  tuille and pickled fennel

 

Pan seared trout with mussels, rested on a bed of roasted carrot puree and red lentils, garnished with green parsley oil

 

Seasoned Chicken Liver and hen stuffed In onion

 

Next, they were presented with the Main Courses:

Cornish hen and liver mousseline, wild rice and lentil, chicken reductions, carrot puree, carrot berr bicme, roasted crimini mushrooms, and pickled onions Seared Cornish hen, placed on top of wild rice with a Fennel chicken liver, and crimini mushroom Au jus, garnished with green basil oil

Finally, judges were presented with the Desserts:

Lemon-curd cake, caramel sauce, semmi-freddo, chocolate spiral and sable! Lemon custard infused with white chocolate, topped with lime zest and caramel Lentil Creme brulee

 

The winner was Faustin Alejandro from the Fairmont Palliser. Baillie Joe Scorgie presented him with a gift certificate for himself and a guest to attend a future Diner Amîcal.

The Calgary Bailliage would like to congratulate Faustin Alejandro from the Fairmont Palliser for winning this event. The Bailliage would also like to thank the Petroleum Club for sending their two competitors, and for the support they provided to all the participants and their continued dedication to culinary excellence and the Chaîne des Rôtisseurs.
