Foreign Concept Dîner Amical

On a beautiful summer day, the Calgary Bailliage was hosted by owner Duncan Ly and executive chef Jinhee Lee at Foreign Concept for their first Diner Amîcal. Once inside, guests were greeted with a very lively atmosphere, a traditional glass of Taittinger Champagne, followed by a lovely selection of hors d’oeuvres to begin the evening.
Once our hosts are given everyone a glimpse of the fare for the evening we moved to the dining room and were presented with a wonderful meal which not only highlighted the professionalism of our servers but the culinary roots of our hosts and the technical skills for which they are known.

Aged Bison Tartare, Smoked Egg Yolk, Parmesan Gougeres
Course 2
Cured Albacore Tuna, Pickled Apple, Toro, Ahi Tuna Tataki, Sesame Nori, and Apple Cilantro Consomme
Course 3
Butter Poached Lobster, Squid Ink Pasta, and Red Curry Emulsion
Course 4
Frozen Persimmon and Passionfruit
Course 5
72-Hour Braised Short Rib, Carrot and Potato Pave, Puffed Grain, Heirloom Carrot, Fried Mushroom, and Natural Jus
Course 6
Tête de Moine, Chinook Honey, and Brioche
Course 7
Coconut Haupia, Spiced Granola, Meringue, Pineapple, Strawberry, and Crème Anglaise

After the meal, Bailli Jan Hansen gave a wonderful accolade noting the long history Duncan Ly has with the Chaîne des Rôtisseurs and the pleasure our group had in finally holding a Diner Amîcal at his restaurant with Chef Jinhee Lee. The food and service were top notch and we hope we can return in near the future.
